Tomato

A glossy red, or occasionally yellow, pulpy edible fruit which is eaten as a vegetable or in salad.

The tomato truly is an amazing food.  Every day there are more and more studies declaring the fabulous health benefits.

The redness comes from the lycopene they contain. It’s not actually produced by the body so we need to eat lots of red foods to get in into our diet.  Incidentally, lycopene is found in many facial skincare products as the “active ingredient”.  You could make your own facepack – use the skin of the tomato on your face (skin side up) and leave it for about 10 minutes.  Be warned though as the active enzymes could bring out a little rash if you have sensitive skin.

It’s a natural pigment and is one of the most potent cancer fighting antioxidants. On top of that it has good levels of vitamins A, C and K which are good for general bone and skin health and glossy shiny hair.

One really important thing about lycopene is that it is easier for our bodies to absorb if it’s been cooked.
