Black Garlic, Carrot and Thyme Oat Cookies

I was sent some Black Garlic to try recently.  It was during a savoury biscuit phase I was going through while freelancing at home.  I was determined to create great tasting savoury biscuits for my girls to enjoy with a glass of milk.  I came up with these. Enjoy!

Black Garlic, Carrot and Thyme Cookies

You’ll need

  • 50g butter
  • 100g oats
  • 100g plain flour
  • 2 medium sized carrots
  • 3 heaped tbsp fresh thyme
  • 6 small Black Garlic cloves or 3 of the larger ones
  • 1 tbsp golden syrup
  • 3 tbsp whole milk

To make them

  1. Preheat the oven to 180C, line two baking trays with greaseproof paper and set aside.
  2. Melt the butter and set aside.
  3. Grate the carrots and set aside.
  4. Mix the oats, flour, grated carrots together and then add some very thinly sliced or chopped black garlic.  season at this point with salt and pepper if you wish. I didn’t because these were for my girls.
  5. Chop the fresh thyme and stir this in.
  6. Make a well in the middle and pour over the melted butter, golden syrup and the milk.
  7. Bring the mixture together to form a soft, sticky dough.
  8. Divide the dough in half, then half again and half again so you should have 16 equal sized pieces.  If you don’t want to bake them right away, you can pop them in the fridge at this point.
  9. Roll these into a ball, then flatten into a round cookie shape and pop them on the baking tray a few centimetres apart.
  10. Bake them for 15 minutes until golden brown on top.
  11. Cool on the baking tray for a few minutes and then transfer them onto a wire rack to cool completely.

These were great with a slice of cheddar cheese and a strong cup of Darjeeling.

  2. I like the look of these biscuits, Urvashi, but I have never seen black garlic. Would you make them with green garlic or leeks, do you think?

    • Thank you. I think they would work super well with leeks finely chopped actually, perhaps chives or wild garlic too. If you use regular garlic I think use about half and add a little more golden syrup as the flavour of black garlic is a bit sweet too. xx

  3. Oh they sound so good, love the sound of savoury. I’ve seen black garlic around but haven’t actually used it. Did it give the biscuits a smoky taste?
