Beetroot

the edible dark-red spherical root of a kind of beet, eaten as a vegetable.

Beetroots are packed with goodness.  They’ve got potassium, iron, vitamin A, vitamin B, vitamin C, folic acid, protein, fibre….the list is literally endless.  Read more at the Love Beetroot website.

The great thing about these is that they are so readily available at the supermarket nowadays pre cooked so you don’t need to have pink fingers for days from peeling and cooking them.
